Craft Chocolate from Bean to Bar
Just like a fine wine, Australian craft chocolate is distinct and individual. Depending on where the cacao bean is grown and what variety it is, you’ll find unique characteristics and flavour that sets each one apart from the rest. And it’s this craft that married perfectly with Simeon Crawley’s passion for all things produced locally, ethically and traditionally. He studied chocolate making at the Ecole Chocolat Academy in Canada and is now producing the finest single origin chocolate with ethically-sourced cacao from around the world in his hometown of Bright, Victoria.
