Chef Andy Ricker of Pok Pok Som is no stranger to Asian food. He has years of experience whipping up delicious Northern Thai Cuisine, and has even won awards for his fresh take on the flavours. But it was the discovery of drinking vinegars in a local Asian market in Portland, Oregon, that took his work to the next level. The sour and sweet taste of drinking vinegars complemented his food so well, he formulated his own brews for cocktails and not-alcoholic drinks to serve at all nine of his restaurants.
